VEGAN Mac&Cheese | Macaroni and Cheese Recipe


Ingredients for 4big-6small portions:


200g uncooked macaroni pasta

4 rasher of no pork vegan bacon

200g vegan cheddar

2 tbsp vegan spread


Tools:

sauce pan

grater

spatula

bowl

colander

knife

ladle/spoon

stainless steel bowls/ casserole dish


Method:


1. Fill a large saucepan with water, put the lid on and bring to the boil over a high heat. Add a good pinch of sea salt. Once the water is boiling, stir in the macaroni pasta.

2. Remove from heat after cooking, drain the hot water; to stop the pasta from cooking leave it for one minute under running water.

3. Heat the oven at 200C.

4. In a big bowl add the drained pasta, chopped no-pork bacon, vegan spread and shredded vegan cheddar cheese. Simply mix everything together with a spatula until combined. I would say this recipe is not super cheesy, it has the perfect pasta, bacon, cheese balance for me; so feel free so add a bit more cheese than I did if you like so.

5. With a ladle/spoon add the pasta into your desired oven proof recipients or casserole dish. Bake at 200C for 14minutes. Enjoy hot.

5. Keep in the fridge for up to 3 days and reheat in the oven/microwave for a few minutes until the cheese starts melting again.
